Good Morning!!! Will ya look at that.. – it’s Christmas Eve! Thank goodness, now I only have to survive the madness that is work.. easy peasy..

This crazy little guy is currently fast asleep on my lap/arm.. but above he is on top of the shower, which is one of his favourite places to hang out when I’m getting ready, wearing his Santa Paws collar, if this doesn’t tell you it’s Christmas, I don’t know what will 😉

The rest of the today will be a bit of a mess.. the current plan looks a little something like this

  • work
  • “get home “..this is part of the list as I’m not sure how easy or difficult this is gonna be later this evening (will there be a bus?on time? otherwise- a cab.. which is another problem in itself.
  • bake
  • run
  • cook and eat dinner with my Love ♥
  • bake some more
  • open one of our presents, accompanied by a bit of bubbly :), at midnight
  • sleep
  • DONE! woohooo!

Honestly, I don’t know if the run is gonna happen, it depends on how long it will take me to get home and whether I’ll find Mowgli like

Hallelujah! – It’s Sunday! Two days to Christmas, which means two days of work then  three glorious days off.. to say I’m delirious with Christmas spirit  tiredness is an understatement, but it’s all good, cos soon people will return to being their normal selves, i.e. not having a nervous breakdown because the Brussels sprouts are sold out at 4am. Sounds good to me!

It’s been over a week since my last post.. errm.. – oops! And to be honest I don’t know if this week will be much more productive, we’ll see.. it’s Christmas, I’m not gonna put myself under any more pressure than necessary – I’ll try though.

Yes- there’s chips/fries in there..I had a few, and crisps..I didn’t eat any. It’s definitely not clean, lean or green..except for the first dinner..cooked by yours truly- chicken, quinoa and with roasted peppers and mushrooms with a sprinkling of spring onion. Yum!

With that, I’m signing off..to dive head first into the crowds for a final, healthier Christmas lunch with my Beloved, bestie and her little boy.

Sweat:On!

Good Morning!

The weekend over here was off to a good start, with a Tone It Up Booty Call which consisted of a 5 minute run to warm up, followed by Karena & Katrina’s Fine Toning Arm Routine.

Instead of doing the 3 rounds back to back though, I added a 5 minute run after each circuit and cooled down with a 10 minute walk. My cooldown would usually only last five minutes, well – depending on how intense the workout was, but today I felt the need to stretch my legs out a bit more. The final touch was a proper stretch of all muscle groups 🙂 happy days!

After sweating it out, I was sooo ready for breakfast..

Mmmmhh, porridge made with skimmed milk and cinnamon, topped with ground flax and banana plus more cinnamon! I could eat this every day, and I’m not ashamed to say that I often do. Although, Peanut Butter is sometimes added to the bowl of deliciousness, which makes this even more amazing. ♥ I hope I’m not the only one that gets this excited about oatmeal.. 🙂

In other news, as planned my honey and I went Christmas shopping yesterday and I’m happy to report we didn’t just purchase 60% of all the presents needed, they are now also wrapped already! Whooohooo!

There’s just something about wrapping presents that makes me feel all christmassy inside, that and an open fire, hot cocoa, mulled wine, baking…  Unfortunately, we don’t have a fireplace in our apartment and I have yet to have mulled wine this year, maybe tomorrow though as I’m off work and there’s a small Christmas market with stalls selling all sorts of goodies, well worth a visit I reckon. Next Tuesday will be my last chance to bake some cookies before the big day as I’ll be working straight through until late on Christmas eve. Something or rather someone else making me feel festive is Mowgli.

I couldn’t resist the other day when I saw a Santa collar, it was cheap and even if he couldn’t stand it all, I wouldn’t have wasted more than a couple of €’s. Well, he loves it! Mowgli’s never liked any other collar, so he might be running around as Santa Paws all year. 😉 Now the little munchkin wasn’t in the mood for photographs this morning, so you’re just gonna have to take my word for it, until I can provide you with the goods.

For now, it’s time to get ready for the madness at work, ♥

It’s here – December! The countdown to Christmas is on.. jaysus.. At least, the craziness will be helped along and given a sugar boost early in the morning. Well, every other day anyway, as my other half and I are alternating days.. he’s got all the odd and I’ll be eating the even numbers 😛 yummy!

So on my last day off work before Christmas, after running around trying to remember a few bits and bobs I’d forgotten about again and again, like gift tags, wrapping paper and a Living Social coupon (which had been resting in my account for about 6 months), I made it to my Chiropractor appointment just in time and home to continue the task at hand..baking!

Here, slightly super late, are the goodies- “Chocolate covered Hazelnut Thumbprint Cookies” and “Austrian Vanilla Crescents

Chocolate-Covered-Hazelnut / Cherry Thumbprint Cookies

Servings: A lot of cookies about 40 cookies, depending on size

Prep Time: 10 minutes + 60 minutes for the dough to chill

Time spent in oven at 170°C/340°F: 10-12 minutes

Ingredients:

  • 9 oz/2 cups all-purpose flour
  • 1/2 tsp salt
  • 1/4 tsp baking powder
  • 3/4 cup butter
  • 2/3 cup granulated sugar
  • 1 large egg
  • 1 1/2 tsps vanilla extract

Preparation:

  1. Preheat oven to 170°C/340°F
  2. Weigh flour or spoon into measuring cups. In a large mixing bowl, combine flour, 1/2 tsp of salt and baking powder with a wisk or wooden spoon. Then, measure butter and sugar into a seperate bowl and beat with a handmixer until well combined. Add the egg and combine until well blended. Next you can mix in vanilla extract. Finally, add the flour mixture to the butter mix and beat until combined.
  3. Shape the dough (slightly dampening your hands will prevent the dough from sticking to much) into a round ball, cover in clingfilm and chill for 1 hour.
  4. Unwrap dough, and roll small bits of dough into balls (which should fit anything between a teaspoon and tablespoon). Place balls an inch apart on a baking sheet lined with greaseproof paper
    • For the Cherry Cookie – lightly press a glacé cherry into the middle of each ball.
    •  For the Hazelnut Cookie – lightly press a hazelnut into the middle of each dough ball.

  5. Bake at 170°C/ 340°F for approximately 10 to 12 minutes or until lightly browned on bottoms. Keep checking – you definitely don’t wanna overcook these. 🙂
  6. Cool on wire rack before melting dark and milk chocolate over a simmering pan of water. Drizzle chocolate over Hazelnuts and leave to cool. My choice of covering for the cherry thumbprints is white chocolate, but you can use whatever you like 🙂

 

Austrian Vanilla Crescents

Servings: 30 cookies

Prep Time: 5-10 minutes + 30 minutes in fridge to chill

Time spent in oven baking at 200°C/400°F: 10 – 15 minutes

Ingredients:

  • 265g Plain Flour
  • 1g Salt
  • 200g Butter
  • 60g Icing/Confectioner’s Sugar
  • 1 Egg
  • 15g Vanilla Sugar
  • 180g Ground Almonds

Preparation:

  1. Combine the flour with the salt in a large mixing bowl. Cut the butter into pieces and mix into flour with your hands.
  2. Then, add icing sugar, egg, vanilla sugar and ground almonds to the flour-butter mix. Combine well, shape dough into ball and chill in fridge for 30 minutes.
  3. Seperate dough into about 3 parts and make rolls that are about 1 inch thick. Cut these into 1 inch pieces.
  4. Shape the 1 inch pieces into the shape of a crescent and place on baking tray lined with parchment paper.
  5. Bake at 200°C/400°F for 10 t 15 minutes or until slightly golden underneath. Remove them carefully from tray. Dip the crecents carefully into a mix of icing and vanilla sugar while they are still warm and leave to cool. Alternatively, you can dip half the cookie in melted chocolate.

Twas the day of baking gifts

Today is my last day off before Christmas Day! Not bad, considering I work in retail and it’s utter mayhem in every shop, no matter how big or small, right now. A day off work doesn’t equate to a day of rest for though – oh no, for today is the day I’m baking dozen of cookies which shall be passed on as gifts to co-workers and ‘grown-up’ family members.

On the menu : Sugar Cookie Recipe-made-into-Hazelnut-Thumbprint-covered-in-Chocolate Cookies 😀 and Austrian Vanilla Crescents

Before I can get to that, I have an appointment with my Chiropractor, which hasn’t only been part of a series of appointments ever since I put my back out for the 2nd time in a matter of 5 months earlier this year, but is also coming quite handy-dandy today as I felt that familiar jolt of pain in my lower back two days ago… meh. :/

So, I haven’t been to the gym since Monday, though I’m yearning for the treadmill, as strange as that may sound to some. Anyway, I’m hoping to be able to hop back on the ‘moving pavement’ (<– huh!?) by wednesday next week, which would also coincide with my gym reopening after the festivities. Happy days!
